Goodbye to the weekend :(
This past week was total chaos and I couldn't figure out why it was such a strange week but the combination of 100 degree days and the full moon can probably explain it. I sure do hope this week is better. I will be dreaming of these magical places.....

Red velvet cupcakes
Next week is the 4th of July and what better way to celebrate than making Red Velvet Cupcakes (my favorite!!!) I found this recipe on the Dean and Deluca website, enjoy!
Red Velvet Cupcakes
Makes 24
2 lbs cake flour
1.5 cups buttermilk
1 qt canola oil
1 TB baking soda
1 TB vanilla extract
2 lbs sugar
.25 oz cocoa
1 TB salt
6 extra large eggs
1 fl oz red food coloring
1 TB white vinegar
Cream Cheese Frosting
1.5 lb Philadelphia cream cheese
10 oz unsalted butter
2 teaspoons vanilla extract
4 cups sifted confectioners sugar
Directions
Preheat oven to 325 degrees F. Line 2 (12-cup) cupcake pans with paper cupcake liners. In a large bowl, sift together the dry ingredients: flour, baking soda, sugar, cocoa, and salt. In a medium mixing bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with an electric mixer. Add the sifted dry ingredients to the wet ingredients and mix until smooth. Do not overbeat. Use a 3 oz scoop to portion the batter into the cupcake tins. Bake at 325 for 20-25 mins, rotating trays halfway through baking.
For the Cream Cheese Frosting
Using an electric mixer, beat the cream cheese, butter and vanilla together in a large bowl on low speed until smooth. Add the sugar and continue to beat on low speed until incorporated. Then, increase the speed to high and mix until very light and fluffy. Cool cupcakes completely before icing.

Salad Sunday: Salmon and Potato salad
Salmon and potato salad with lemon yoghurt dressing
serves 4
4 large slices fresh salmon
salt
pepper
2 tablespoons olive oil
14 small potatoes, boiled
1 head of lettuce, shredded
2 tablespoons capers
2 tablespoon dill, chopped
1 teaspoon lemon zest
2 cups plain yoghurt
2 tablespoons lemon juice
salt
pepper
Place the salmon on a baking tray and sprinkle with salt and pepper.
Drizzle with olive oil.
Bake at 350F for 8 minutes.
Remove, cool and cut into pieces.
Slice the potatoes and mix with lettuce, capers, dill, lemon zest and salmon.
Mix yoghurt and lemon juice in a bowl and taste with salt and pepper.
Pour the dressing over the salad and serve.
Enjoy!

Shoes are probably my favorite thing in life and this pair by Brian Atwood is on my must-have list!
The fact that he calls them Maniac pumps makes me laugh, does that mean I'm a maniac to want to drop $575 on these pumps? Wouldn't it be lovely to have a large budget just for shoes?
Things to never say to a FABULOUS single person...
I am one of those very rare individuals who is actually quite happy being single. Now, some of you probably don't believe me but it is very, very true. I can tell you that I have heard everything under the sun but the one that always gets me "Why is a nice girl like you still single?" It's totally ridiculous and I usually hear it at a wedding or engagement party or on a first date which is truly the very worst thing you can say on a date.
I am still single because I have chosen to wait for my partner, a relationship that will last....I know many people who are in their second marriage or are unhappy in their relationship. I, on the other hand, will not have to suffer through a "starter marriage" or a lot of growing pains that people who get married too young have to endure. When I find Mr. Right, he will be my partner and my best friend not just someone who will take care of me. Because quite frankly, I can take very good care of myself without some man doing that for me!
So, another fabulous single friend sent me this article from Glamour magazine and I wanted to share it with you. PLEASE take note and know that most people who are single could very easily go out and find a relationship. But those people who choose to be single are happy and will not settle with something that doesn't feel right. Those are the people who say "I'd rather be single and happy than unhappy in a relationship" and really mean it. And yes, I AM talking about me :) This does not mean, I am not looking or open to finding Mr. Right, it just means, I am not losing sleep over the fact that I am still single and about to celebrate ANOTHER birthday. Glamping
Depending on how well you know me, you may or may not know my story of camping....so let me tell you my story!
Growing up my parents always joked that their idea of camping was a "Holiday Inn with a black and white tv!" So I grew up thinking the exact same thing. But when my parents starting sending me to spend summers in Texas with my family, my grandparents, aunts and uncles thought they would be adventurous and test my ability to withstand a night in a tent in Colorado or New Mexico....usually my cousins (all boys) would put some rubber snake in my sleeping bag and I would run to the pop-up where my grandparents were sleeping!
Needless to say, I got all the way to college saying "Camping is not my idea of a fun time." Then I started dating a wonderful guy named Justin who loved to camp. He desperately wanted to take me on a trip and see if he could change my mind and I finally agreed....he had planned two nights in a very nice state park in North Carolina where I had a bathroom and a "cold" shower. We had such a great time that we stayed for two extra nights.....and so there it is, my story of how I evolved into a camper....now, telling you that story doesn't mean I am into "roughing" it. I am a tried and true GLAMPER!!!!! Anyone who has gone with me to Bonnaroo, knows I come prepared! Well, not to this degree but wow, wouldn't it be nice?

Recipe of the Day
When it is this hot outside, turning on the oven is one of the last things people want to do....
Here is a great recipe from Bitchin Camero
Mediterranean Tuna & Chickpea Salad
1/2 lb. whole wheat orzo (or your favorite pasta shape)
2 6 oz. cans tuna in olive oil
1 15 oz. can chickpeas, drained and rinsed (or 2 cups cooked chickpeas)
1 cup roasted piquillo peppers, diced (or roasted red peppers)
3 tbsp. capers
2 tbsp. sherry vinegar
1 cup shredded carrots
1/4 cup chopped Italian (Flat Leaf) Parsley
Salt to taste
Cook your orzo or pasta until al dente, the drain in a colander and rinse with cold water to stop the pasta cooking. Place the pasta in a large bowl.
Add the tuna with the olive oil to the bowl, then add the rest of the ingredients and toss until well-combined. Taste and add salt if needed.
Serve immediately or refrigerate for up to 3 days.
Makes 6 servings.

Chanel Bocce set....
I would be totally lying if I said that I didn't want this.....Chanel is offering a vintage-inspired bocce ball set in a braided wicker and leather case. The set, priced at about at about $2,800, includes eight stainless steel bocce balls engraved with the Chanel logos and a wooden "jack" or target ball. The case is finished in two-tone brown and natural woven wicker with Chanel's trademark interlocking C's done in braided rope on top, and brown saddle leather straps and handle. The set resembles a vintage picnic case and is no doubt meant to be used on the lawn of a gracious country house. Given that Chanel is a French fashion house I think this should be called a Pétanque set!!!
With my birthday coming along next month, if anyone wins the lottery between now and then, this would make a seriously FAB gift!!! :)

Happy Father's Day!
I am so lucky that I get to spend all of Father's Day weekend with my totally amazing dad! We started today with the World Cup, went to Colonial Downs to watch and bet on some ponies and now we are enjoying the US Open.....I have gained so many valuable things from my father, one of the best things in my opinion, is my love of sports! And to be able to share them with him today is just so fabulous! I hope all of you celebrate an amazing father on this day....I know I'm going to :) Love you Daddy!!! xo

Yum: Zucchini Blossom & Mozzarella Baked Eggs
There is a really fun blog called Bitchin Camaro and it is surprisingly a blog about food....she posted this yummy recipe and I just had to share...
Zucchini Blossom & Mozzarella Baked Eggs
If you can’t find zucchini blossoms or they are out of season, just add some more zucchini or omit altogether.
6 large eggs
1 zucchini, cut into matchsticks (about 2 cups)
6 zucchini blossoms, coarsely chopped
1/4 cup, plus 2 tbsp. cream
6 oz. fresh mozzarella, cut into small cubes
1/4 cup fresh breadcrumbs
1/4 cup garlic chives, minced
1 oz. Parmesan cheese, grated
Bread for toast
Preheat the oven to 375° and grease 6 ramekins. If you don’t have ramekins, just make little piles in a greased 9 x 13 baking dish. If you use this method, your eggs probably won’t cook evenly, so some will have softer yolks and some will have firmer yolks. You may also have to cook them a little longer until the whites are set.
Fill each ramekin with equal amounts of zucchini, zucchini blossom, cream and mozzarella. Carefully crack an egg over each one, making sure the yolk remains intact. (It’s not the end of the world if it doesn’t – it will still taste great!) Sprinkle the top of each egg with breadcrumbs, chives and Parmesan cheese.
Carefully transfer to the oven and bake for 12 minutes, or until the whites are just set. Remove and serve with toast for dipping!

Fashion from SATC
It's safe to say the 2nd installment of SATC didn't excite eveeryone as much as the tv series or even the 1st movie, but the fashion was incredible! At times, it was certainly over the top and I know most of us could never wear those outfits in our daily life but I was so intrigued that I bought the SATC2 book which details all of the fashion. It is so fabulous, that my Mom bought the book for her and her girlfriends too!!!
I was thrilled that some of the fashions are at Neimans but sad that I can't afford to out and buy them all....who doesn't love YSL and Halston fashions?

While I was in Miami, the Tony Awards were going on in NYC....now, the fashion didn't quite measure up

Quotes about our furbabies....
It has been nearly a week since we lost our wonderful furbaby, Moxley, and I am still so sad. I found some really wonderful quotes about the relationships between animals and their owners and I want to share them...

Just for today I will try to live through this day only, and not tackle all my problems at once.
Just for today I will be happy. This assumes to be true what Abraham Lincoln said, that "Most folks are as happy as they make up their minds to be."
Just for today I will adjust myself to what is, and not try to adjust everything to my own desires, I will take my "luck" as it comes, and fit myself to it.
Just for today I will try to strengthen my mind. I will study. I will learn something useful. I will not be a mental loafer. I will read something that requires effort, thought and concentration.
Just for today I won't find fault with anything, nor try to improve or regulate anybody but myself.
Just for today I will have a quiet half hour all by myself, and relax.
Just for today I will be unafraid. Especially I will not be afraid to enjoy what is beautiful, and to believe that as I give to the world, so the world will give to me.

SATC2 Decor!!!!
While I know that most people have mixed reviews about the latest SATC flick, I must say that the fashion and decor was enough to keep me interested even if the story and plot were lacking a bit...
Elle Decor has a great story which gives you the background on some of the decor. I went to the movie with my Mom over the Memorial Day weekend and we both let out a huge "awwww" at the sight of her closet, every girl's greatest dream.

Loving Gnomes...
I have to admit, I have an obsession with gnomes. I'm not sure what it is about them but I just can't get enough of them. Despite my love for them, I'm not sure about dropping this kind of cash on them, they are $374 each and they are plastic!

Rainbow Bridge
A wonderful friend sent me this poem today and it is a tearjerker but it is just what I needed to hear today….
“Just this side of heaven is a place called Rainbow Bridge…
When an animal dies that has been especially close to someone here, that pet goes to Rainbow Bridge. There are meadows and hills for all of our special friends so they can run and play together. There is plenty of food and water and sunshine, and our friends are warm and comfortable. All the animals who had been ill and old are restored to health and vigor; those who were hurt or maimed are made whole and strong again, just as we remember them in our dreams of days and times gone by.
The animals are happy and content, except for one small thing: they miss someone very special to them; who had to be left behind. They all run and play together, but the day comes when one suddenly stops and looks into the distance. The bright eyes are intent; the eager body quivers. Suddenly he begins to break away from the group, flying over the green grass, his legs carrying him faster and faster. YOU have been spotted, and when you and your special friend finally meet, you cling together in joyous reunion, never to be parted again.
